Nothing beats the smell of Thanksgiving turkey with woody tones of sage gracing my kitchen air.

Sage is a newcomer to the culinary world but not to the horticulture environment.

It was valued as a medicine and food preservative and did not enter the kitchen setting until the 17th century.

This herb also received the spotlight when it was named the Herb of the Year in 2001. But what is sage?

Perennial Herbs for the Urban Garden

Edible perennials are essential to a permaculture plot, and anyone who wants more food with less work will want to incorporate some perennial herbs into their garden.

Of course, whether or not a plant is a perennial in your garden depends on your USDA hardiness zone.

If you want to try to grow something that’s just above your zone–lavender in zone 4, for example–you can try planting it along the south side of your house, where winter temperatures will stay a little warmer.

Here are some perennial herbs to consider for your garden:

Chives (Allium schoeoprasum)
When I was a kid I liked to chew on the long, thin leaves of chives from the yard. Chives are hardy in zones 3 through 9, and the leaves and purple flowers have a mild oniony flavor. Chives are good to grow under fruit trees, since they’ll repel borers and prevent apple scab. Chives (and other plants in the allium family like onions and garlic) will also deter deer and rabbits.

Herbs In The Garden: Sage (and Recipes)

Sage is a wonderful herb with many uses.

Herbalists use it as a digestive aid, some people grow it just for its aromatic qualities used in freshening a house, and its uses in cooking are numerous.

For the urban gardener, sage can be a great choice for a dry sunny corner where nothing else likes to grow.

Growing: Sage is another Mediterranean herb which likes hot dry well-draining soil. This is one plant which will be very unhappy during a humid summer. If you live in a humid region, add a lot of grit and sand to the soil around the sage, and make sure it is not crowded near another plant. Without adequate air circulation and well drained soil, your sage will not thrive.
